The Fortress, located in Galle - Sri Lanka, is where you can try this more than extravagant creation of the hotel's culinary team. It was inspired by the century's old practise of stilt fishing, which can be still seen along the coastline today and has been named The Fortress Stilt Fisherman Indulgence, if you are thinking of ordering it. So what are the ingredients you ask. An Irish Cream flavoured gold leaf Italian cassata, is served with a mango and pomegranate compote and a champagne sabayon. It is finished with a handmade chocolate stilt fisherman, on which sits an 80 carat aquamarine stone! Enquires have been made as far away as Japan, but a hotel spokeswoman advised nobody has yet forked out the money to try it.
